Broccoli and Chicken Casserole

One of my good friends made our group of friends a broccoli and chicken casserole for dinner. I’m not sure what I did to get such an awesome friend with fantastic cooking skills because this casserole was delicious. It was cooked just right, and I ate and ate until my stomach could no longer possibly hold anymore food.

It’s rare that I get a chance to eat home-cooked food since I live in a university dorm. Most of the food I eat is either mass-produced in the cafeteria (not surprisingly, it’s pretty gross most of the time) or from restaurants. I love eating out, especially with my good friends, but it’s pretty expensive and really adds up after a while, so I am very appreciative of the fact that my friend likes to cook1. All she asks for in return is to do the dishes, which my friends and I do on a rotating basis because really, what’s a few dishes compared to a lovely home-cooked meal?

  1. Don’t get me wrong, I like to cook too, but I have absolutely nothing to cook with at school, and the kitchen I have at my disposal is pretty grotty. []

    Oh my god, I adore casserole. My favourite is tuna, but I’ll take anything. Now you’re making me hungry! Bad Manda!

      That’s my friend in the photo, actually – she was posing with the casserole but I didn’t include her face in the photo out of consideration for her privacy. It is a really gorgeous top; it looks great on her!

        Yeah, as soon as I posted that I was like, “Doh, why would Manda be holding the casserole if she didn’t make it?” Sometimes I’m silly. :P

    Cooking is one of my favorite pass-times. I feel for you not being able to cook whenever you want, but then again, I’d love to be in your position in school instead!

    What a sweet friend! I can’t imagine not being able to cook but then again I have always loved to cook myself. The dish looks absolutely delicious, I love broccoli and chicken casserole! Hell, broccoli-anything casserole sounds good to me. :)

    I tend to not eat out just because I don’t have a job, I live on an allowance that my mother provides, but I love eating at home and making food for myself, its always a cozy comfort.

    The thing I missed most at uni was definitely homecooking. My mum makes an awesome apple crumble.
