Today Was a Fairytale

Yesterday1 was one of those days when all the stars aligned and everything fell into place effortlessly.

I had bubble milk tea with taro, one of my favorite drinks. I had a delicious home-cooked Chinese lunch. I saw Chinglish, an absolutely fantastic play. I went to KTV and, for an evening, could pretend that I was back in my beloved China. And I finally heard something I’ve been waiting to hear for far, far too long.

Oh, and I made these coconut-grapefruit cupcakes with matcha (green tea) frosting:

  1. Yes, the title of this entry is ripped off the Taylor Swift song, but “Yesterday Was a Fairytale” doesn’t quite have the same ring. Ah, well. []

    Also, I continue to be amazed by your awesome baking skills. I’ve decided that when I get back to Canada, I’m going to try and learn. I have a muffin recipe picked out for me to try already! :D

    I’ve never tried baking with grapefruits… I’m always so terrified of how sour they are but your cupcakes just look soooo yum! I’m sooo tempted to try baking something like that now!

      I used this recipe to make these cupcakes. Since it only asks for grapefruit zest to be used and not grapefruit juice, the cupcakes had just the right amount of grapefruit flavor without it being too sour. Also, the coconut milk balances out the tang of the grapefruit, so the flavors worked perfectly together!

    That sounds absolutely great! :D But I have a confession. I’ve never had bubble tea. I’m so curious about it though!
